Wagyu Biltong is the caviar of biltong. Wagyu beef is bred for its quality and marbling of fat throughout the meat. As the fat is monounsaturated, it is high in Omega 3 and 6 and the fat is liquid at room temperature, which allows the flavour of the meat to take over the senses without the fat cloying on the pallet.
Our Wagyu Drywors is made purely from F1 Wagyu Beef and South African spices stuffed into lamb casing and dried. Fattier than normal drywors, but without the fattiness on the pallet.
